Every hour of delay to rid a harvested head of lettuce of field heat shortens its retail shelf life by one day, no less.

With proper cold chain management, The shelf life of lettuce can be extended to 3 weeks, from the usual 5-8 days

Any break or weak link in the cold chain considerably shortens the shelf life of vegetables, fish, poultry, meats, certain medicines and chemicals, and other perishables. This break leads to spoilage and waste, lost of nutrients, and reduced potency.
